Savory Carrot Rolls Recipe

Ingredients:

For the dough:

  • 3 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 packet (2¼ teaspoons) active dry yeast
  • ¾ cup warm milk (about 110°F)
  • ¼ cup warm water
  • 2 tablespoons butter, melted
  • 1 egg

For the filling:

  • 3 large carrots, grated
  • 1 small onion, finely chopped
  • 1 tablespoon oil or butter
  • 1 teaspoon cumin seeds
  • ½ teaspoon turmeric powder
  • ½ teaspoon chili powder (optional)
  • Salt and pepper to taste
  • Fresh cilantro (optional, finely chopped)

Instructions:

Step 1: Prepare the dough

  1. In a small bowl, dissolve yeast and sugar in warm water. Let it sit for 5-10 minutes until it becomes frothy.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture, warm milk, melted butter, and egg. Stir to combine.
  3. Knead the dough for about 5-7 minutes until smooth and elastic. Add more flour if necessary.
  4. Place the dough in a greased bowl, cover it, and let it rise in a warm place for about 1 hour, or until doubled in size.

Step 2: Prepare the carrot filling

  1. In a pan, heat oil or butter over medium heat. Add cumin seeds and let them sizzle.
  2. Add the chopped onion and sauté until translucent.
  3. Add the grated carrots, turmeric, chili powder, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the carrots are soft.
  4. Add cilantro if using, then set aside the filling to cool.

Step 3: Assemble the rolls

  1. Preheat the oven to 375°F (190°C) and line a baking tray with parchment paper.
  2. Punch down the dough and roll it out on a floured surface into a rectangle (about 12x18 inches).
  3. Spread the carrot filling evenly over the dough, leaving a small border around the edges.
  4. Roll the dough tightly, starting from one of the long sides, like a jelly roll.
  5. Cut the rolled dough into 1-inch pieces and place them on the prepared baking tray, cut side up.
  6. Cover and let them rise for 15-20 minutes.

Step 4: Bake

  1. Brush the tops of the rolls with a little milk or melted butter.
  2. Bake for 15-20 minutes or until the rolls are golden brown.
  3. Let them cool slightly before serving.
